Gluten-Free Vegan Oatmeal Cookies

I have always loved oatmeal cookies. Something about the sweet cinnamon flavors, mixed with the homey flavors, and the texture of a cookie that is both soft and crunchy on the outside. There is nothing better. I personally love oatmeal chocolate chip cookies. Something about the heartiness of oats and cinnamon just punches the classic chocolate chip cookies up a notch.

When I have leftover frosting from a cake, I love to make these and make oatmeal cookie sandwiches. They are easy to freeze and a delicious treat.

When using gluten-free flour, not all are the same. I would suggest you use the Bob’s Red Mill Gluten Free 1 to 1 Baking Flour. I know they are Vegan, and Non- GMO along with being Gluten Free. They are one of the best 1 to 1 replacements. I also like using King Arthur’s Gluten Free Measure for Measure for the same reasons.  

Another option for an egg replacement is ground flax seed, but I prefer applesauce. ¼ cup for every egg is my rule. It’s much faster than waiting for the flax seed to form.

For vegan butter, I like to use Earth Balance in stick form or Melt sticks.

For oats, I use Quaker Gluten Free Old Fashion Rolled Oats. You can buy them in bulk on Amazon.

For dark chocolate, Enjoy Life is a great dairy free, vegan option. They are free from most allergens. I always keep them in my pantry. I use Amazon to get them at the best price.

Once cooled, enjoy the alone, or add buttercream to the medium to make a delicious cookie sandwhich.

Gluten Free Vegan Oatmeal Cookies

Delicious gluten free vegan oatmeal cookies that make you feel right at home. Add chocolate chips to these, and you can't stop eating them.

  • Stand Mixer

Dry Ingredients

  • 1 1/2 cup Gluten Free Flour
  • 2 tsp Cinnamon (Most recipes call for 1 tsp, but I love cinnamon)
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup Unsalted Vegan Butter (2 sticks)
  • 1/2 cup Granulated Sugar
  • 1 cup Light Brown Sugar
  • 1/2 cup Organic Unsweetened Applesauce (2 eggs worth)
  • 1 1/2 tsp Vanilla extract (Make sure it's gluten free)

Stir-In Ingredients

  • 3 cup Gluten Free Old Fashion Rolled Oats
  • 1 cup Dark Chocolate Chips (optional)
  1.  Preheat the oven to 350 degrees. Line baking sheets with parchment paper

  2. Whisk together dry ingredients, gluten free flour, cinnamon, baking soda, baking powder, & salt. Set aside

  3. In a bowl with an electric stand mixer with the paddle attachment, cream together the butter, sugar and brown sugar.

  4. Mix apple sauce and vanilla to wet mixture

  5. Slowly add in dry ingredients. Keep mixer at a low setting

  6. Once mixed, add in oats, mixing in with a woodenspoon or rubber spatula

  7. If wanted add in chocolate chips at this time

  8. Rolled dough into about 1 ½ inch wide in diameter balls. This will seem large, but this is the best way to make cookies that are chewy in the middle and crisp on the outside.

  9. Place on the baking sheet and cook for 12-14minutes until golden brown.

  10. Remove from the oven and let them sit on thebaking sheet for a few minutes.

  11. Then move cookies to a cooling rack.

  12. Once cooled enjoy!
